Our cooking is strictly guided by the principles of the Mediterranean diet, which favours the use of products grown without pesticides or chemical fertilisers, promotes diversification in the variety of seeds and local plants, thus contributing to reduce the risk of coronary disease due to animal fats, diabetes and obesity.
Dishes are freshly prepared, using fresh and carefully selected organic products and ingredients, accompanied by excellent wines from Campania and the Cilento area.
The vegetables, extravirgin olive oil and most of the fruit are produced by local growers; the pasta is hand-made; the fish comes from the nearby Tyrrhenian Sea; the herbs and wild plants are from the Mediterranean maquis and are widely used in cooking.
